You get an introduction into sparkling cider production, made with the same traditional method as Champagne and other sparkling wines.
The cider tradition in Sogn is freewheeling and unrestrained, resulting in many unique and innovative drinks. This was the first place where bitter cider apples were grown, and among the ciders that Balholm produces are a hopped cider, cider with malt, and the Viking Cider, a replica of an ancient fermented fruit drink.
